I love Spring! It's the time of year when the earth re-awakens; people go outside, flowers and plants bloom, and everyone just seems to be in a better, happier mood. The fashion takes quite a change; pastels, muted neons, creams, and dresses too! Ladies start wearing their pink lips and peachy cheeks. Everything is good again in Spring! Well, I always feel that Passover is the beginning of spring; a re-birth if you will. Since Passover is soon ending and Easter is beginning I wanted to share this year's experience with Passover and inspire healthy eating for the Spring. This Passover I enjoyed quite a few seders; one where I teach, one at my house and one at my sister's house. Although I'd love to speak about each Seder, I don't want to bore you until the plagues come home. The Seder that was really special was hosted at my sister's house. I helped make beet borscht, kale salad and fried matzoh. There were several mistakes (which only created funny memories) such as too much salt in the kale salad. My sister told me to massage the kale with salt to break it down. First of all, she had sea salt which is stronger than table salt, and second of all, I thought that I had to massage each and every layer of the kale. The kale salad ended up being the "salt-water" of the Seder. Before the seder, my sister made a point in saying that there is a difference between symbols and sacredness. She mentioned how in some cultures spices are sacred and represent G-D. Which got me thinking about cooking, among many other things, and how each spice and flavor when I cook means something. They add to the story of the food. Food is sacred to me, and a religious discussion at the table brought me to realizing that food is like my religion. Let's welcome spring with healthy greens, fruits, whole grains and of course sugary treats! What is sacred to you? xoxox
